Smoothies

I parted with tradition last week.  I got in my car and drove to Target with the express purpose of buying a blender retail.  I know, I know - I shocked even myself.  After getting burned with two yard sale blenders, and deciding I wanted to blend stuff that day, I went out and bought a brand spanking new blender.
I had my eye on this smoothie recommended on my friend Lindsey's blog.  I made it, but to be honest, I did not love it.  I am not a big peanut butter person, and I could definitely taste the spinach.  I tried again, replacing the bananas with strawberries, omitting the peanut butter, and cutting down on the greens, and that was better.

Today, however, I attained perfection.  Here's the recipe:
  • three cubes of ice
  • a handful of fresh strawberries
  • a handful of fresh pineapple
  • 1/4-1/3 c Greek yogurt
  • a bit of spinach (3-4 leaves)
  • a little honey
This is delicious.  I wish I had added the pineapple juice to the blender, though.  Anytime I core and cut a pineapple, my favorite part is drinking the juice at the end.  Should have just dumped it in.  I am finding, however, that I waste at least half the smoothie because it's so filling.  I wonder if there's a way to freeze the leftovers and maybe put them in the fridge to thaw the night before I want to drink them in the morning...may have to experiment with that.
